Today, we’re giving this classic a contemporary twist with our delicious “Pap” Pie. This version features a lightly curried filling, packed with bacon, baked beans, and cheese, perfect as a side dish to a braai or even as a main course.

Ingredients:

Crust:

  • 3 cups water
  • Salt to taste
  • 2 cups maize meal (mealie meal)
  • 2 tbsp butter
  • 1 cup grated cheddar cheese

Filling:

  • 1 onion, finely chopped
  • 1 tsp crushed fresh garlic
  • 250g streaky bacon
  • 1 tbsp vegetable oil
  • 2 tbsp Rajah mild and spicy curry powder
  • 1 tin (410g) baked beans
  • 4 medium-sized eggs
  • 1 cup cream
  • 1 cup grated cheddar cheese
  • 8 cherry tomatoes halved or 6 tomato slices
  • Salt to taste
  • Robertsons ground black peppercorns to season

Preparation Method:

Prepare the Crust:

    • Grease a 24 cm pie dish and the bottom of a 22 cm dish.
    • Heat the water to a rolling simmer, then stir in the maize meal. Continue stirring until smooth.
    • Reduce heat to low, cover, and cook for 20 minutes.
    • Add butter, cheddar cheese, and season to taste.
    • Pour the mixture into the prepared pie dish and press the smaller dish into the center to form a crust, leaving a 1cm thick base and rim.
    • Allow the crust to set for 1-2 hours, then remove the inner dish.

Prepare the Filling:

    • Fry the onion, garlic, and bacon in vegetable oil until golden (about 8 minutes).
    • Stir in the Rajah curry powder and cook for another minute.
    • Add baked beans and season to taste. Remove from heat.
    • In a separate bowl, mix eggs, cream, and cheese, seasoning with salt and pepper.
    • Spoon the bean mixture into the pap crust, then top with the egg mixture.
    • Decorate with tomato halves or slices.
    • Bake for 20 minutes or until the eggs are set.
